peanut curry soup


preparation & cooking time: 60 min

serving: 4


recipe
  • 1 tbsp cooking oil
  • 1 medium size onion
  • 1 tsp each garam masala, salt, and nutritious yeast 
  • graded half apple
  • 4 oz each diced carrot, potato and green kale
  • 2 oz dried yellow pea
  • 1 L water
  • 1 tbsp vinegar 
  • 2 tbsp peanut butter
  • 1/4 tsp dried chili (opional)

how to make:
  1. fry chopped onion in 2 L pot till caramelized about 5  min
  2. put all spices and apple, and cook extra few minute till aroma comes out, 
  3. add 1 L water and all the vegetable,dry pea, vinegar, salt, and nutritious yeast
  4. bring to boil, and cook low heat about 45 min
  5. mix peanut butter and cook extra 5 min

almond & sunflower seed dip


preparation & cooking time: 10 min

makes: 1 cup

recipe:

  • 4 oz each almond and sunflower seed
  • 1 clove garlic
  • half lime
  • 1 tbs soy sauce

how to make:

  • soak almond and sunflower seed over night (about 10 hours)
  • blend all ingredients above 










perfect for vegetable or clackers dip.

and also, you can use this dip as Sushi rice!
simply split on Nori and wrap with some vegetable, and try it!
it is delicious!

Chocolate Coffee Cookie



preparation & cooking time: 30 min

makes: 24 cookies



How to make:

  • Preheat the oven to 375 F
  • mix well butter and sugar in a large bowl
  • put egg and vanilla extract in the mixture
  • add all the dry ingredients
  • add some milk
  • make a round ball using 2 table spoons, and place the ball on the baking pan
  • bake for 10 min


I like to use organic products and free range eggs

dry ingredient:

can be all unbleached flour,whole wheat flour or half of each. and if you avoid using too much flour, you can subsidies by ground rolled oat, coconut flour, rice flour, ground nut (almond, cashew, walnut*, pecan...), ground seed (sunflower seed, pumpkin seed*...)* might create bitterness flavour

and my new purchase Nutri Bullet mills all grain, nut, and seed perfectly like fine powder.

for extra information, when I combine some coconut flour, cookie become crispy.


sugar:

I like demerara dark brown sugar. and other option would be light brown sugar, cane sugar,
granulated sugar... and when you use all granulated sugar, cookie tend to be sweeter, so, you
can reduce the amount of it.

baking powder:

I prefer to use aluminum free

because I use some espresso powder and coco powder, this cookie contain some caffeine,
I don't recommend giving too much to younger kids. Or some one intolerant of caffeine.


And at last, these cookies are better even the next day, it becomes moist.
So, you shouldn't eat all in one time!
